I have a question regarding some carrots I canned. I peeled and sliced the carrots and placed them in hot canning jars. I then poured a hot solution of vinegar and honey over them and processed them in a boiling water bath for 15 minutes. The receipe said to blanch the carrots first for two minutes which I did not do. I am wondering if this matters since raw carrots are usually processed for 20-25 minutes but this is a vinegar solution. So I'm wondering if the carrots are still okay. They are not refrigerated.
