Cathy, yes, I do bake it before I freeze it....
Misc.I'm not sure you have to, it's just what I've always done. After it has rested a bit I wrap the pan completely in foil. This time DH will take them out of the freezer and put them in the refrigerator the afternoon or evening before and then we will bake them again to re-warm just before the party. If they seem watery I will re-warm without covering. I haven't had too much trouble with that in the past, but this year I used different brands mozzarella & ricotta and used organic noodles, so we shall see. (I was at Sprouts and didn't want to make a second stop at my regular grocery at the end of a very long day of doctor visits and shopping!) The ricotta came in a little basket inside the container, I had never seen it packaged that way. It tasted very good when I tried it while putting it in the lasagna! Happy Holidays!
