Chicken Frittata

Misc.
1 to 1 1/2 c cooked chicken, cubed
1/4 c milk
6 eggs
1/4 tsp salt
2 tbsp butter
1/2 salsa

combine milk, eggs and salt; mix well with fork but don't beat. heat butter in ovenproof 10 inch skillet. sprinkle chicken evenly over bottom of skillet. pour egg mixture over top. spoon salsa evenly over eggs. cook over low heat 6 to 8 min until almost set. broil about 6 inches from heat, 2 to 3 min. or til set.
cut into wedges and serve immediately. makes 4 servings

This is simple and with a salad makes a good meal. I have a teenage son so I usually fix two of these, one just for him.
