Recipe: Eggs, Eggs And More Eggs

Here's some ideas and a couple of more recipes I've found. How about french toast for breakfast, or german pancakes? Most custards use a lot of eggs, home made ice creams, custard type pies, and you can always make breads, cakes, cookies, and muffins and freeze them for future use. Angel food cake takes a bunch of eggs - some recipes call for a dozen.
Here's a couple of recipes
Lazyman's cheese buttons
6 eggs
salt to taste
1 finely chopped onion
2 1/2 c flour
1 c cottage cheese
mix all ingredient together and drop into boiling water that is salted. cook and drain in strainer. fry with 1 onion, chopped, bacon or buttre in pan. fry until brown.

Egg pancakes
4 eggs
1 tbsp sugar
1/2 tsp salt
1 c milk
1 c flour
1/2 inch lard or shortening
beat eggs slightly. add remaining ingredients except shortening. mix and bake as follows: melt shortening in heavy fry pan. pour about 1/4 c dough at a time.
edges will curl up, then turn and fry other side. they will be flat. serve with butter and syrup.

Egg foo yung
2 tbsp vegetable oil
3 eggs
1/2 c well drained mixed Chinese vegetables
3/4 tsp salt
5 oz cooked chicken, cubed
soy sauce
heat oil in skillet. break eggs into mixing bowl. beat until yolks and whites are well blended. add Chinese vegetables, chicken and sallt. using a tablespoon, pur one portion of the mixture at a time into skillet or on preheated griddle. brown each side about 1 min serve with soy sauce. 16 patties
