Dear Rosemary: I think that canned chilies, like the ones

in Jackies recipes will be perfect. In Puerto Rico, we use the canned variety for Mexican cooking. For our traditional "PIQUE" we use the small red & green extremely spicy ones, that are autoctonous to Puerto Rico.
