On Wednesday, at the Recipe Swap, dear Betsy posted several wonderful & easy recipes for chicken, specially one for the Slow Cooker that was good even for children in the kitchen. If you are specifically planning to bake chicken I suggest that you buy chicken breasts, already cleaned & deboned. Season them with Salt & pepper (perhaps some Rub sold in the Supermarket for BBQ) early in the morning. You can add some olive oil to seal the seasoning.

About 1 hour before serving prepare an oven ready pot. Put olive oil (brush) in the pot. Put the chicken pieces already seasoned. Add a few potatoes cut in fourths, onion slices, and red (bell) Pepper slices. Add 1/2 cup of white wine and cover with aluminum foil. Bake in a preheated oven for 45 minutes or until the chicken is ready. Serve with a potato salad from a Deli and a green salad made up of mixed Mezclum, sliced tomatoes, sliced mushrooms and bottled Italian dressing.

This is as simple as I can get. I hope that you will have some time to practice the chicken before serving it for guests.
