LIGHT BALSAMIC DRESSING
Source: Light and Spicy by Barbara Gibbons
1/4 cup imported balsamic vinegar
1/4 cup tomato or tomato-vegetable juice
2 tablespoons olive oil
2 tablespoon water
1 clove garlic, mashed
Dried or fresh minced thyme and dried or
fresh minced marjoram to taste (optional)
Salt and pepper to taste
Shake everything in a covered storage jar.
Reshake before serving. Store in refrigerator.
Makes about 3/4 cup
