Hi Daine,

I use miso as the base of many soups. I found that I could substitute it mixed in water for any recipe that calls for stock. I would use white miso for a vegetable or chicken stock substitute and red miso for a beef substitute. For the beef stock substitute add some carmelized onions with a bit of soy sauce and some mushrooms. Yumm!

And you'll find some recipes in "3 Bowls" that use miso. The one that comes to mind that I believe uses the most proportionately is Miso Peanut Butter Sauce. It's delicious!
