1 tsp vanilla
1/2 cup chopped nuts (optional)
Line an 8-inch pan with foil and butter.
In pan combine sugar, milk, chocolate, corn syrup and salt. Cook and stir over med-high heat till mixture boils. Clip on candy thermometer to pan. Reduce heat but continue boili boiling until thermometer registers 234 deg soft ball stage (20-25 minutes).
Remove pan from heat add butter and vanilla but do not stir. Cool without stirring to 110 deg (about 55 minutes).
Remove thermometer from pan. Beat vigorously with a wooden spoon till fudge just begins to thicken, add nuts if desired. Continue beating until very thick and starts to lose its gloss (about 10 minutes).
Immediately spread in buttered foil-lined pan. Score into squares while warm.
