Fruit and Nut Baked Apples

When I answered your posting last night my mouth started watering --- but there's only my husband and I at home now so 6-8 apples was just too much! I started scouting my cookbooks, found this recipe, logged off and went in to the kitchen to make them! Luckily I had all the ingredients on hand.

4 large baking apples (Rome Beauty, Jonathan, McIntosh, etc.)
1 T. lemon juice
1/3 c. dried apricots
1/3 c. chopped pecans or walnuts
3 T. brown sugar, packed
1/2 t. cinnamon
2 T. melted butter or margerine

Cut core out of each apple. Peel top of apple down about 1" and brush peeled edges with lemon juice. Mix apricots, nuts, brown sugar and cinnamon in small bowl. Add butter and mix well. Spoon mixture in apple cavities.

Pour 1/2 c. water in bottom of crock pot. Place 2 apples in bottom of cooker.
Arrange remaining 2 apples above, but not directly on top of, bottom apples. Cover and cook on low 4 hours until apples are tender.

(Note: I let these go for 6 hours while I slept and they're fine. The house smells divine! I'm now going to make pumpkin pancakes. See what you started!)
