I can almost smell the pork and see the mango tree on your patio with the lovely lighting! Here in AZ it's around 105 with lots of dry, hot wind and several forest fires raging around the state. Basically we are facing another summer of tinderbox conditions. My DH, along with many, many other law enforcement personnel are planning on spending long hours on patrol this holiday weekend to help safeguard against careless activity causing more fires. Yesterday I roasted a large amount of fresh onions, peppers, mushrooms and asparagus to use in colorful cool salads,layered on turkey burgers or just piled on toasted bread and topped with a bit of cheese.While the evaporative cooler is keeping it comfortable in the house, I don't want to over burden it with heat from the oven.
