HI Angel. Sorry I'm so slow to get back to you about citron - everyone else answered! It has been a super busy day.

Citron is a large, lemon shaped fruit of the citrus family, up to 8 inches in length. the peel is rough textured and greenish to golden yellow. The peel and the pith are the important elements as it is a fruit used soley for candying, crystallizing or otherwise preserving. The pulp is very sour.

That information comes from "The Book of Food". I would think lemon or lime would be a good substitute if you can't find it. I don't know if it would be near dried fruits like raisins and prunes, so even in a specialty shop - a homemade candy store or candy making supplies? Just an idea.

I appreciate your help on the pudding and might even make it this weekend if it isn't too terribly hot - I try to avoid using the oven on these super hot days, but this may be one I just can't resist!
