Hi Pat,

Wow! What a treat to meet another MFP from another state! I have enjoyed swapping information and recipes with Linda Lou and look forward to hearing more from you in the future.

We had the "jerky" scare a couple of years ago. Funny that you should mention that as I was reorganizing my materials yesterday and ran across the University's orginal memo on the subject. Have to say that when we first read it we all thought we would give up making jerky because we envisioned the result being something akin to shoe leather. We survived and the jerky isn't anything like shoe leather. :-)))
