Recipe: Pineapple Stuffing

PINEAPPLE STUFFING

1/2 cup (1 stick) butter, at room temperature
1 cup sugar
5 eggs
1 (16 ounce) can crushed pineapple
5 slices white bread, cut into pieces

Heat oven to 350 degrees F. Butter a 2-quart casserole dish or 13x9-inch baking pan.

In a large bowl, with electric mixer, cream butter and sugar until fluffy. Beat in eggs one at a time. Stir in pineapple, then bread pieces. Spread mixture in prepared casserole dish or baking pan.

Bake, uncovered, for 1 hour.

Serve warm as a side dish to ham, pork or poultry, or chilled as a side for sandwiches.

Makes 8 servings.
