I don't know how "technically correct" this is to do, or if I'll be admonished by the baking experts for saying so, but I do it.

I have found that I can mix together muffins batters and actually put them into a greased muffin tin the night before. I wrap the whole tin in plastic and then refrigerate it overnight. In the morning, I preheat the oven and then pop it directly into the oven from the refirgerator. I found that most recipes take 3 to 5 minutes longer than regular timing because of the cold start factor.

This technique has worked with several varieties that I have tried. I don't know whether it will work with all varieties. You were also concerned about a "wholly healthy" breakfast. You can find some very healthy muffin recipes.

You specifically asked about popping things in the oven. Have you thought about the stovetop? When I used to rush off to have to work in the morning I would put oatmeal and water on the stove in a covered saucepan over low to medium heat while I showered and got ready in the morning. It was usually ready after 20 minutes or so, and so was I. Simple, easy, warm, healthy, and filling.
