GRADY'S AMERICAN GRILL'S GRILLED CHICKEN PASTA
2 tablespoons butter
1/4 cup diced scallions
1 cup sliced fresh mushrooms
1/4 cup diced Roma tomatoes
1/2 tablespoon minced fresh garlic
1/2 teaspoon ground black pepper
1/2 teaspoon iodized salt
1 teaspoon dry parsley flakes
1/4 teaspoon paprika
8 ounces heavy (whipping) cream
1/3 cup fresh-grated Parmesan cheese
1 pound linguini pasta, cooked al dente*
1/2 pound prepared grilled chicken breast, sliced thin
Melt butter in medium saute pan. Begin to sweat scallions, mushrooms and tomatoes in butter. Once vegetables begin to soften, add fresh garlic and remaining spices. Saute over medium heat for about 2 to 3 minutes or until most of the liquid cooks out of vegetables.
Add heavy cream to pan and reduce slightly or until sauce begins to thicken. Whisk in Parmesan cheese and reduce heat. Allow to simmer for a couple of minutes.
Place cooked pasta in boiling water for a few seconds to heat slightly. Add cooked linguini noodles to pan and combine grilled chicken and sauce. Check for seasoning and adjust if necessary.
Place on serving platter and garnish with fresh-grated Parmesan cheese.
*Cooking pasta al dente means cooking it until it offers only a slight resistance when bitten into; it should not be soft or overdone.
