How refreshing!

I just love Thai food, some parents at my younger son's school have a Thai restaurant. I went and picked up for my family on my birthday, and also, some friends took me there for lunch to celebrate. I can't get enough of it!

I, too, have made it at home, and it is pretty easy, as all stir-fries tend to be with a little prep.

I like your tip about the coconut milk. Good point. However, in my cupboard, I have a couple of boxes of dried coconut milk I have to use up first, before I join you in the low-fat coconut milk club. I actually bought it for my husband, because a couple of times a year, he gets nostaligic for his mom's Caribbean cooking, so this way he has his main ingredient on hand for whenever the mood strikes him. He always does fish, though.
