I hope I don't confuse you but,

Here in the South we have grits for breakfast everyday and sometimes for supper too..If you have breakfast at a Restaurant here you will be served grits.
White or Yellow corn is dried and prepared as Danielle has explained BUT the dried corn is also ground and made into GRITS and also corn meal etc. and this is the way we cook the dried ground corn.
We cook our grits in water or milk by boiling until thickened and serving with salt pepper and lots of butter...Or...we make sausage gravy, shrimp gravy or something we call Red eye gravy when we have fried ham..
