GREEN BEAN-MUSHROOM ALFREDO
1 tablespoon margarine or butter
1/4 cup sliced almonds
1 (1 lb.) pkg. frozen cut green beans
1/4 cup chopped red bell pepper
2 tablespoons water
1 (8 oz.) can mushroom pieces and stems, drained
1/4 cup purchased Alfredo sauce*
Melt margarine in small skillet over medium heat. Add almonds; cook 3 to 4 minutes or until golden brown, stirring occasionally. Remove from skillet; set aside.
Meanwhile, in 1 1/2-quart microwave-safe casserole, combine green beans, bell pepper and water. Cover; microwave on HIGH for 11 to 14 minutes or until crisp-tender, stirring once halfway through cooking. Drain.
Uncover; stir in mushrooms and Alfredo sauce. Sprinkle with toasted almonds. Microwave, uncovered, on HIGH for 2 to 3 minutes or until bubbly around edges.
*Instead of using purchased Alfredo sauce in this recipe, you can prepare the sauce from a mix. Follow the package directions and use 3/4 cup in this recipe. Cover and refrigerate the remainder to use another time.
Makes 8 servings (1/2 cup each)
