Misc. I am impressed your husband is so supportive of your efforts. It must make life easier for you. June, have you tried roasting vegetables? The carmelization that takes place in vegetables with sugar content really changes the flavor. I have yet to met a vegetable I didn't like roasted.
Sometimes people who don't like vegetables are responding to something other than the taste of the vegetable. Like canned peas, I just can't stand them, but like fresh or frozen peas. And canned asparagus has an entirely different taste and texture from fresh. I doubt if a person who was blind folded and had never tasted canned, would know what it was. Also canned beets and carrots are far from the "real" thing. Can you try them in different forms and see if it helps? If they are usually cooked soft, try al dente or vice versa, or if he likes sweets, try ginger glazed carrots.
My husband hates frozen brussells sprouts but he will eat fresh if they are cooked briefly in boiling water, then sauteed slightly and still have some texture.
You have probably already tried some of these tricks, but thought it was worth mentioning. Btw, congratulations to both of you on the exercise and weight loss.
