OATMEAL CAKE WITH BROILED TOPPING
FOR THE CAKE:
1 1/2 cups flour
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt
1 cup rolled oats (any kind)
1 1/4 cups boiling water
1/2 cup margarine, softened
1 cup light brown sugar, packed, divided use
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
FOR THE BROILED TOPPING:
3/4 cup flaked coconut
1/2 cup chopped nuts
1/4 cp margarine, melted
3 tbsp milk or cream
TO MAKE THE CAKE:
Preheat oven to 350 degrees F. Grease and flour a 9-inch square baking pan.
Combine flour, soda, cinnamon and salt; set aside.
Combine oats and 1 1/4 cups boiling water; let stand 20 minutes.
In bowl beat margarine, granulated sugar, 1/2 cup brown sugar, eggs and vanilla until light in color. Stir in oat mixture, then flour mixture. Pour into prepared pan.
Bake 40-50 minutes or until cake tests done. Remove cake from oven and set oven to broil.
TO MAKE THE BROILED TOPPING:
Combine flaked coconut, the remaining 1/2 cup brown sugar, chopped nuts, melted margarine and milk or cream.
Spread cake with Topping and broil 5 minutes or until bubbly.
Serve warm or at room temperature.
