Since you're sure it's not nuts, I will offer one more thought. Wheat "berries" - the whole kernels from the wheat stalk - can be soaked, shortly boiled, then ground. The site where this technique was described showed a photo of the procedure, and the finished ground wheat berries shown in the bowl of the food processor did indeed look like coarse cornmeal. I'm sure these would have the nutty flavor of whole wheat with the texture that you remember. Could it be, do you think?

If not, I hope you'll find the right answer without too much trouble.
