Re: Wheat germ or bran?

It doesn't seem likely that the ingredient was wheat germ. Germ is processed in very tiny fine-shaven flakes, much smaller the wheat bran flakes ... Not at all "cornmeal"-like.

Are you sure it was actually a wheat product? I'm thinking the bread could have contained actual ground nut meal, which could have a closer texture to what you're describing.
