ADAIR'S BAKED MACARONI AND CHEESE
1 (8 ounce) package macaroni, uncooked
2 cups milk
2 tablespoons butter
1 teaspoon salt
1 teaspoon paprika
1/2 pound cheese (at least), grated
Cook the macaroni according to package directions.
While it is cooking put the milk in a saucepan and add the butter, salt, paprika and cheese. Bring the milk to the boiling point. Turn the heat very low and let it sit while the macaroni cooks. Stirring now and then to help melt the cheese.
Preheat oven to 325 degrees F.
Drain the cooked macaroni. Put it in to a greased casserole. Pour the cheesy sauce over it and stir together.
Bake in a moderately slow oven, 325 degrees F. The casserole is done after being in the oven for about 30 minutes but because the Malone's liked the bottom and top extra crisp and cheesy and chewy Adair always baked it an extra 15 minutes. If the macaroni seems to absorb the milk and be to dry pour a little more milk over it.
