RIGATONI A LA VODKA
1 pound uncooked rigatoni
1/4 pound bacon, diced
1/4 cup butter
1/3 cup vodka
1 1/2 cups plain tomato sauce
1/2 cup heavy (whipping) cream
1 packet bouillon
Salt and ground black pepper to taste
Grated cheese (Parmagiana)
Cook macaroni according to directions; drain well.
Lightly saute bacon. Drain except for 2 tablespoons drippings.
Add butter and simmer on low heat for 3 minutes.
Add vodka and tomato sauce and simmer 5 minutes. Add cream and salt and pepper to taste and keep warm (never cook with cream on high heat - it will separate).
Mix the cooked macaroni with the sauce, top with cheese and serve.
Makes 4 servings
