Jeanne, the smell of this soup is wonderful!

I hadn't even turned on the stove, just had the cut-up veggies mixed with the water and cheese rind and the smell was so great! It's been cooking now for 45 minutes and I can't wait to try it. I will refrigerate it in an airtight container until it's time to add the beans and transfer it to a slowcooker for the buffet. My friends and neighbors are axious to try it. The cheese rind really looks strange in there, huh? I can see why you remove it before serving!
