ISO: Vegetarian Minestrone Soup

Once again, I am hosting my annual Christmas Cookie Exchange followed by a buffet. My friend is bringing Cheeseburger Soup and I would like to make a vegetarian Italian-style soup to celebrate our upcoming Tuscany trip. Does anyone have a tried and true recipe for Vegetarian Minestrone or perhaps some other Italian vegetaian soup? Time is getting short and I don't have time to taste-test the recipes, so thought this would be the place to ask! Thanks, Micha
