Hi Gina - Didn't know your DH was from Keene! When we lived in Western Mass, we were about 15 miles from the Keene city limits! Went there often.

Am. Chop Suey can be modified many ways - I've added mushrooms, too - also, I've added some leftover corn to it which is good, too.

Did you use ketchup or just the tomatoes and sauce - I kind of like the tomatoes and the ketchup, it gives it a bit more flavor.

Glad you and DH enjoyed it - say hello to your Keene guy!
