Hi Louise. I make burger buns alot. My favorite is from semolina dough. Go to
search TKL and plug in Semolina rolls, it's the first one. With this recipe I
make 8 rolls. When you roll them out use your counter top with a little flour
and cup your hand over top and go in a circular motion. They really do come out
perfect everytime. Make them not completely round and you can kind of pat them
down before they rise. Please let me know how they come out!! For whole wheat
rolls use the same recipe...exchange whole wheat for the semolina and add 1
Tbsp. gluten (this can also be added to the semolina as well). They may need an
extra 15 minutes to rise. You can also add cracked flax and/or brush with water
and then dust with whole oats to make them even better! Happy baking.
