Recipe: Stroganoff Potato Pie (using sour cream and chives potato mix, 1970's)

1 (4.8 oz) box Betty Crocker Sour Cream and Chives Potato Mix
3 tbsp. butter, melted
1 egg, beaten
1 1/2 pounds ground beef
1 medium onion, sliced
1 clove garlic, finely chopped
1 (4 oz.) can mushroom pieces and stems, undrained
1/2 cup water
2 tbsp. ketchup
2 tbsp. grated Parmesan cheese
Heat oven to 375 degrees F.
Cover potatoes with very hot water; let stand 10 minutes. Drain thoroughly.
Toss drained potatoes with butter and egg. Press potato mixture against bottom and sides of ungreased 9-inch pie plate or 8x8-inch baking dish.
Bake 10 minutes.
Cook and stir ground beef, onion, and garlic, until beef is brown; drain. Stir in sauce mix from package, mushrooms (with liquid), 1/2 cup water, and ketchup. Heat to boiling, stirring frequently. Spoon beef mixture into potato shell; sprinkle with cheese.
Bake until potatoes are brown, about 20 minutes. Let stand 5 minutes.
Makes 6 servings
