Melinda re: Stuffing with Veal - I would like to try & help you.

Good afternoon. Melinda, your package of stuffing I know is 12 to 16 oz. 1 pound of veal is perfect for that amount of bread stuffing. The orange juice is basically for moister purpose & also will provide for good taste. The amount??? well lets see, add a little when braising your concoction. When meat is near done add the raisins. Melinda, what we do not want to do is over mix these ingredients. Sooo, in a large bowl, Place 1/3rd of the stuffing & add 1/3rd of the veal concoction & mix lightly. Repeat twice more & add the walnute in between. I do not know if you are employing onions, celery ete. if so you will need to use 1 to 1 1/2 cups of each at the beginning before you add the veal into your pan.
Now then about the balance of the orange juice, add enough to the concoction to make your stuffing concoction moist because remember you will be baking this dish & it will dry-out somewhat. Trust me Melinda, you will not fail at this.
