Before MSG was introduced to Chinese cooking, Chinese never thought our cooking needed such ingredient to enhance the flavor. Once it's introduced into our cooking, many people believe it does wonderful thing to our diet. In fact, MSG can be found in many natural products, such as seed weeds. I don't think you need any substitution for MSG, I would recommend you to omit it all togeter as it does bring up problems for many people. I don't have MSG in my pantry and I think my food turns out OK. If I'd eat it in some dishes in restaurants, or a piece of KFC fried chicken, I'd feel thirsty and uneasy. Therefore, I persoanlly don't think it's a good seasoning. There is an article in "chinesefood. mingco." (Sorry I can't give you the URL as Betsy suggested before.) Please locate that article yourself and you will understand this product more.
