Recipe(tried): Starbucks Raspberry Apricot Thumbprint Scones (copycat recipe)

I, too, was looking to duplicate Starbuck's recipe, so I just used a basic scones recipe (Grandma Johnson's Scones recipe).

Cut the dough into rounds using a large goblet, depressed the center of each round using a gravy spoon dipped in flour, and then filled each center (before baking) with a one-to-one mixture of apricot preserves and raspberry preserves. It worked beautifully.

Grandma Johnson's recipe is the full flavor/full fat variety of scones and makes delicious morsels, but the scones are a little light and soft, rather than the dense, crumbly scone that Starbuck's creates. But, you can experiment with other basic scones recipes and get great results, I'm sure. Good luck.
