Recipe: Little and Adorable Chicken Nuggets

LITTLE AND ADORABLE CHICKEN NUGGETS

24 saltine or whole-wheat crackers
1 pound thin-sliced chicken breast, cut into 1 1/2-inch squares
1/2 teaspoon salt
1 tablespoon mayonnaise
1 egg white
2 teaspoons honey mustard

Preheat oven to 400 degrees F. Lightly grease a baking sheet with rim.

Place crackers in a large zip-seal bag and pound with a rolling pin or meat mallet to make crumbs. Pour onto a plate.

Sprinkle chicken with salt.

In a large bowl, stir together mayonnaise, egg white and mustard. Add chicken and toss to coat.

Gently press each piece of chicken into cracker crumbs to coat. Transfer to prepared baking sheet.

Bake 15 minutes until cooked through.

Makes 4 to 6 servings
