Monosodium glutamate (MSG) is a general purpose flavor enhancer used by food manufacturers because it is cheap, easy to use and can be used in a variety of formulations. There is not a lot you can do to remove it from products that you buy, but there are lots of substitutions. The most common flavor enhancer is salt (or some of the salt substitutes like Lo Salt), but this in itself is the subject of much debate and you might not want to increase your salt intake. Next go to your herbs and spices - pepper (white or black) always gives a lift, a dash of cayenne or paprika. A little grated nutmeg or mace helps sweet and savory dishes. Dried herbs are useful - oregano, thyme (use only a little) and basil. Also useful is a spoonful or so of lemon juice, it often brings flavours into focus and you can also use grated lemon zest - surprisingly good with meat dishes and mushrooms. Try a few combos and see what you like.
