Nancy reg. Mexican Fiesta

I worked in the Mexican booth at our Around the World Dinner. We made large
dishes of enchiladas, a crockpot full of spanish rice, flan, etc. I also have
a great Mexican cookbook. The Montezuma pie sounds great also. How about
Tamale pie? Have a great recipe for tortilla roll ups if you want the recipe.
Makes a lot of appetizers.

If I can be of any help, let me know. My Southern Living magazine arrived
today and there are some great recipes in there including really a really easy
refried bean recipe. Similar to the one I whip up all of the time.
