Nancy-reg. Mexican Fiesta

Will have to do some searching to find the recipe but another thing that went
over really good at my Mexican Fiesta was a Mexican mini muffin. Had them
baked ahead of time and served them on the side in a cloth lined basket. They
were great. I have a Mexican corn bread recipe which would probably work.

Let me know if you want any other ideas.
