Recipe: Mona-refried beans
Misc.Mona, this only makes 4 to 6 servings but you can get the idea and make in big
batches. I have not made this exactly but close to the same ingredients. All
of Southern Living recipes are great.
EASY REFRIED BEANS from Southern Living
1 (10-ounce) can diced tomatoes and green chiles, undrained
2 (16-ounce) cans refried beans
1 envelope taco seasoning mix
1 cup (4-ounces) shredded Mexican cheese blend
Garnish: fresh parsley sprig
Stir together first 3 ingredients, and spoon into a lightly greased 2-quart
baking dish. Sprinkle with cheese blend. Bake at 350 degrees for 20 minutes
or until thoroughly heated. Garnish if desired.
I make mine with a can of refried beans and add a can of green chilies and top
with cheese and they are good also.
