ISO: Mexican Fiesta Recipes for a Fundraiser

Hi, I have a big interest in all kinds of cooking but I could use help with
one particular thing. We are planning a fundraiser for our community centre.
It is going to be a Mexican Fiesta the night before father's day. Does anyone
have Mexican recipes that might help? Large quantity ones would be especially
good. Looking for authentic recipes. Does anyone know how to make Montezuma's
pie (chicken, cheese, tortillas layered in a casserole)?
