Oh! It is a kind of home cured Puerto Rican sausage.

There is a small restaurant very high in the mountains of Puerto Rico at Orocovis, called LA SOMBRA, famous for its LONGANIZAS (made of pork, beef or even white fish). I am used to eating them grilled, with boiled root vegetables (malangas, yuca, batata or ame)& some white or yellow rice. They have less fat than chorizos & you can perceive their wonderful aroma of fresh cilantro, paprika, nutmeg, salt & pepper & sometimes a little bit of ground cinnamon.

Some people fry or bake them & also they are wonderful as part of a PAELLA or in a rice with pigeon peas.
