Other enchiladas

I realize you are looking for a specific recipe, but if you are an enchilada lover, I have two very different recipes. One is not low-fat called Chicken Cream Enchiladsa, using whipping cream, Jack cheese and carmalized onions...yum! The other may sound strange, but is also wonderful. It's called Mashed Potato Enchiladas and is just that, enchiladas using mashed potatoes mixed with a bit of cream cheese and green chili as the filling. Very low fat and very yummy.
