Recipe(tried): Potato Enchiladas

This is my version of an enchilada my husband and I fell in love with at a restaurant.

Mashed Potato Enchiladas

Make stiff mashed potatoes using a tiny bit of cream cheese (low-fat or fat-free OK), 1/2 can to 1 can diced green chilies and salt and pepper to taste. Heat your favorite enchilada sauce, (red or green). Dip corn tortillas in warmed sauce. Roll mashed potatoes in dipped tortillas, place seam side down in baking pan that has been sprayed with non-stick cooking spray. After placing enchiladas in pan, pour remaining enchilada sauce over. Cover with your choice of cheese, colby, longhorn or jack. Bake uncovered at 350 for about 25 to 30 minutes.Serve with green or ripe olives. Yum!
