Glad you liked it. I made the beef roll Mexicana, or whatever the name was, last night. The cube steaks had an outlandish price, so I cut up a round steak, and pounded it to death. Then I sprinkled the pieces with chili powder and S&P. Put a canned chile and some monterey jack cheese on each, and rolled up. I browned them, them put in baking dish with 1 cup uncooked rice and a can of enchilada sauce. I added some water,too because I wasn't sure if the rice would have enough liquid to cook. I added a drained can of red beans near the end.
It worked out pretty well. I should have used a smaller pan, and deeper so that the meat would have been covered. Even with all the pounding I did, it was still tough in places. Also, some of the cheese leaked out, but with the rice and beans, it wasn't a complete loss.
Thanks for a great recipe. My family liked it, and I'll add it to my list of their favorites!
