Recipe: Chef's Salad with Blue Cheese Walnut Dressing (using sour cream and yogurt)
Salads - Main DishCHEF'S SALAD WITH BLUE CHEESE WALNUT DRESSING
FOR THE BLUE CHEESE WALNUT DRESSING:
1/2 cup sour cream
1/2 cup yogurt
2 teaspoons white wine vinegar
1/4 teaspoon celery salt
1/4 teaspoon garlic salt
1/8 teaspoon ground black pepper
1/2 cup (2 oz.) crumbled blue cheese
1/4 cup toasted chopped walnuts
FOR THE SALAD:
6 cups torn salad greens
1 cup thinly sliced cucumber
2 tomatoes, cut into wedges
1/2 cup chopped green bell pepper
1/2 cup sliced fresh mushrooms
1/2 cup sliced pitted ripe olives
6 ounces Swiss cheese, cut in julienne strips
3 ounces ham, turkey, cut into julienne strips
3 ounces turkey, cut into julienne strips
TO MAKE THE BLUE CHEESE DRESSING:
(2-3 hours before serving)
Combine sour cream, yogurt, vinegar and seasonings; mix well. Fold in Blue cheese and walnuts. Chill, covered, 2 to 3 hours to allow flavors to blend.
TO MAKE THE SALAD:
(1-2 hours before serving)
Combine salad greens, cucumber, tomatoes, green pepper, mushrooms and olives in a large salad bowl; toss gently. Chill 1 to 2 hours.
JUST BEFORE SERVING:
Arrange cheese and meats on top. Serve with Blue Cheese Walnut dressing.
Makes 6 servings
