Pat...unless the recipe specifies fresh it is "ok" to use canned..I always use fresh shredded or grated parmesan because to me it tastes so much better and adds so much to the flavor...I like the texture too! You can buy it shredded or grated for you in most gourmet deli departments at the grocery stores...even Kraft puts out a shredded parmesan that is fresher..you would find that hanging with the rest of the grated cheeses in your store.
It's really just a matter of preference unless the recipe specifies. Hope this helps!
