....this posting is going interesting places. In the words of the song "If it feels good, do it", and if it tastes right, eat it BUT if a recipe calls for Parmesan (and we're talking Parmiggiano-Reggiano here) and you use something that isn't P-R then the result will not be as the recipe creator predicted. And therefore the comment about a certain cheese "ruining a dish" is valid because it does not taste like it should. Of course your taste may still prefer the ruined dish, but that's a diferent story!
