While my kids still prefer the stuff from the can, I must say that I have become
a "purist" when it comes to Romano or Parmigian. I absolutely love the texture, flavor and appearance of it. It does keep very well ... and I have found that due to its full flavor, you wont need as much. Since I need to diet, I found that just a small grating on steamed veggies makes me more satisfied and I dont miss the butters and cream sauces I used to use.

Like the others who posted, I encourage to try fresh parm or romano.

Finally, I am not ENTIRELY sure, but I remember reading that Parm/Romano out of the cans use cellulose as a filler, and there are other additives used to keep it free flowing. You may want to consider this aspect.
