kt: more on cheese ratings

Well kt, I have to admit that although I think it's very interesting to read ratings by taste testers, we all have our own ideas about what tastes good. And for most of us, that's what ever we grew up with! After all there are cultures in which insects are relished and cultures which gag at the thought of eating animal food and cultures which rarely had fresh produce but got their vitamins from the seaweed in the stomachs of the whales they caught. What I'm getting around to is that if a type of cheese tastes good to YOU then that's the type that IS good. I like reviews like the ones in Cook's Illustrated when they happen to agree with my personal choices, but I think the whole matter of "taste" is too individual and subjective to be touted as an absolute. Some people really enjoy the "green can" cheese because it gives an interesting saltiness to food which isn't just plain salt. It depends on what you're looking for as well as what you're used to. I even know someone who likes Limburger cheese... but not me!!! (grin)
