It seems every year my husband gets into a bit of a panic trying to use up all the pears on "his" pear tree.
Yes, it really is "his" pear tree, as I am not much of a fan of pears.
However, in the interest of familial peace, I am helping him can some preserves. This jam is delicious, and spicy! if you don't want it so spicy, just cut down on the ginger.
It reminds me a lot of jalapeno jelly, but I think this would be more nutritious (if you are "into" that).
Ginger-pear Jam
3 cups cored, peeled and chopped pears (I chopped them in the food processor)
1/4 cup peeled and minced fresh ginger (use food processor, I did this first)
juice of 1 lemon (I used Real lemon, from a bottle, couple of generous squirts)
1/2 cup water
1 box Sure Jell (I used a low-sugar jam pectin product, made by Bernardin)
4 cups sugar
Load all of the above into the bread machine, and set to the "jam" cycle.
I am making this batch for X-mas presents, so I will be using 250 ml (1 cup) jars and processing them this evening.
