Hunks of great cheee

We,too, buy a hunk and grate it (freeze if its a lot)....it is so much tastier .... and goes further too. Lately, for certain toppings,we've been 'shaving' curls of the cheese using the vegetable peeler....and we like this too .... especially with certain dishes.

When I'm putting a lot in (stirring in -in sauces,etc.) I sometimes use a hunk of locatelli (am I spelling it correctly?) .... a little less expensive,but very good.

I think a lot of recipes do not say (unless its a recipe that - Kraft for example -is putting out!)....they figure people will use what they like.
